Kodiak Cakes Muffins Recipe with a Protein Hack Twist
Kodiak Cakes Pancake Mix is a great high protein flour substitute for any recipe! However, this is Protein Hacks where we go above and beyond the normal protein muffin recipe limitations.
Naturally adding more protein on top of the Kodiak cake mix was the first thing that popped into mind when building this recipe! Banana nut muffins have always been a favorite of mine and fit perfectly into my muscle building diet plan.
Today I’m using Kodiak Cakes Plus 1up Nutrition Vanilla Whey Protein to create this delicious protein muffin recipe! This bread really hit the spot after an active day working out. I was also able to make a bit extra to keep as an easy snack for pre or post-workout, breakfast with some protein coffee, or a quick high protein dessert!

- 2 Bananas Ripe and Mashed
- 1 Egg
- 3/4 cup milk of choice
- 1/4 Cup Melted Butter/ Coconut Oil
- (Dry)
- 4 Scoops Whey Isolate Protein Powder
- 1 1/2 Cups Kodiak Cake Mix
- 1 tsp of Ground Cinnamon
- (Optional)
- 1/4 Cup Brown Sugar
- 1 tsp Vanilla extract
- 1/4 Cup Chopped Walnuts
- Blueberries
- 1/4 Cup Chocolate Chips

Prep Instructions
Let’s start out by Mashing the Bananas in a food-safe bag. If you don’t have a bag you can mash your bananas however you like! A great alternative is to put the bananas in a bowl and use a spoon or fork to mash the bananas.
Now we can combine the 2 Bananas, 1/4 Cup Grass-fed butter, Unsweetened Almond Milk, and 1 Egg in a small bowl. Then We’ll use a nonstick spatula to stir all the ingredients until they are properly fused.
Next we’ll use a larger bowl to mix the Protein Powder, Kodiak cake mix, Cinnamon, and any other toppings you’d like to add. Give the dry mix a quick stir and get everything evenly spread.
Now let’s add our mixes together using the larger of the two bowls! Using the rubber spatula begins stirring the mixture until everything is blended. The consistency should be a bit on the wet side ( don’t worry they’ll perk up when we bake them!)
Portion your Banana protein muffins however you’d like, however for the sake of the recipe, I used a 1.5-ounce scoop to portion 12 servings!

Banana Nut Protein Recipe Tips
Whenever using bananas in Protein Powder Recipes you want to wait until they’re just overripe. On occasion, if I have some bananas that are getting overripe, I will peel and freeze them! This allows me to have bananas on demand for my protein powder recipes. They’re also great for protein ice cream or protein smoothie recipes!
I also like to mash my bananas in a food-safe bag. I peel the bananas and put them in the refrigerator inside of bags a couple hours before baking. This allows the bananas to further soften and become much easier to mash.
The more you mash the bananas the fewer chunks will be in your bread! It’s really a matter of preference. Personally, I don’t mind a few chunks of banana in my protein muffin recipe!
